We are delighted to offer private chef experiences with Lilly Trewartha, whose approach to cooking is delicate, refined and deeply grounded in seasonality and intent.
An approach shaped by restraint and care

Lilly’s cooking is influenced by Japanese culinary philosophy, an ethos rooted in balance, attentiveness and respect for ingredients. Her time working both locally and internationally, has shaped a style that values clarity over excess and presence over performance.
Each menu is designed in consultation, reflecting Tasmania’s produce, the rhythm of the seasons and the tone of the evening. The result is food that feels thoughtful and composed, expressive without being overly elaborate or fussy.
How the evening unfolds
Private dining at Del Sol is unhurried by design. Depending on your preferences and budget, the experience may take shape as a quietly progressive multi-course meal or a considered selection of dishes presented thoughtfully throughout the evening.
As dusk settles, music hums softly through the space, a quiet undercurrent to conversation and laughter at the table. Candles are lit and their glow pools across timber and linen, deepening the warmth of the room. Glasses are topped up and chinked with merriment, as flavours drift through the air, mingling with the cool breath of the sea carried in through open windows. From the kitchen, you watch as the chef moves with calm focus and intention, each action deliberate, each plate assembled with utmost care. When dishes are served, their stories are shared too, where the local ingredients came from, how they were chosen, and why they belong together. It is immersive, intimate and deeply present, an evening that lingers long after the last plate is cleared.
